I can't wait for my mother and maid of honor to get here! They should both be here in a few hours. :) YAY!
To prepare for my multiple guests, I made a lovely casserole.
This a spin on my Santa Fe Casserole. This casserole contained:
- About 3 cups of cooked brown rice
- 1 egg
- 2 cups Cheddar Cheese
- 1 can of Dark Red Kidney Beans
- 1 chopped green pepper
- 1 cup of skim milk
- Lots of pepper
- Lots of chili powder
I just mixed everything up and baked it in a greased casserole dish for about 35 minutes at 350 degrees.
Delish!
My dinner included a side salad as well.
And "dessert" was a Ghirardelli Limited Edition Peppermint Bark Chocolate, which I swiped from the salon this AM. :)
I see cantaloupe in my future as well!
