English Muffin French Toast

Morning!  Haha, it was fun to read your responses to last night's "Do you workout like you're in a music video?" post.  I was surprised to learn most of you do, too! Awesome!  I also enjoy walking down busy city streets with my iPod and pretending like I'm in a music video.  Very amusing.

I went to bed so early last night -- running 6.0 miles always wipes me out.  (Hey, I just spilled coffee all over my leg. Boo!)

French toast is one of  my favorite breakfasts, and since it works with waffles, I thought it might also work with English muffins (English toast?).

So delish! Super chewy and all the "nooks and crannies" were filled with wonderful eggy goodness.

I used two English muffins (cut in half) and 1 whole egg to make four little English Muffin French Toast.

With real maple syrup for dipping....

And a plum for some fruit.

Gotta get my booty movin'! Have a wonderful day! I have a jam-packed of work, errands, and dinner with the second love of my life, Meghann!

I am a french toast eater too. This weekend I made banana bread and used it for french toast.

I usually act like I am on stage doing a concert, but I'll have to pretend I'm in a music video next time. One time I was upstairs with my ipod in front of a mirror prending I was on American Idol and I couldn't hear my husband come up the stairs and he nearly died laughing when he saw me. I'm sure people have caught my facial expressions on the treadmill at the gym too.
So glad that I'm not the only one that acts this way. And I have Brit on my ipod too, but her old stuff.

What a great twist on french toast! I missed yesterdays post but I definitly work out like I'm in a music video - it helps me get through it!

These remind me of those things at McDonalds. I don't remember what they are called, but my old roommate used to get them all the time.

Yours obviously look and I'm sure taste, much better.

Oh yeah - the McGriddle.
