My lunch break is rapidly coming to a close, so I've got to make this snappy! I was craving some delicious PROTEIN for lunch, so I made one of my favorite recipes....
Savory Turkey Bacon Egg White Mini Quiches
These gorgeous little suckers are easy to make, too! You could modify this recipe in so many ways to suit your individual preference, but here's how I made them today:
- Beat 1 egg and 3 egg whites
- Mix in: 1/4 cup chopped spinach and 1/4 cup chopped baby bella mushrooms.
- Slice two uncooked pieces of turkey bacon into thin strips and mix into the egg batter.
- Add 1/4 cup shredded cheese (I used colby and mozzarella).
- Add pepper to taste (salt isn't necessary because of the turkey bacon).
- Scoop batter into three greased muffin tins.
- Bake at 350 for 30 minutes, until brown.
- Let cool for 5 minutes and enjoy!
Alongside my savory mini quiches, I enjoyed a crunchy carrot. I bet this lunch has the perfect combo of protein + fat to keep me full for HOURS!
Around mid-morning, I got really hungry (and fast)! I had a nice mix of cantaloupe and bananas.... mmmm!

Those look sooooooo yummy! When I started reading the recipe, I was thinking how I would probably never make them, but SURE, why not read anyway?
I can't believe how easy those are! I think I'm going to make them next week [after grocery day!], but I'm gonna throw in some dill, too... and maybe nix the cheese.

jordan: thanks! i am a firm believer in UNCOMPLICATED food! i hate cookbooks with like twenty ingredients per dish... no one has that much stuff on hand anyways! i'm not sure how well it would work in MINI muffin tins... i think you'd have to chop everything up reeeeeeeeeeeally small to make it all fit. but that would be so fun and it would make a really good app for a party! the great thing about this recipe is it can be modified in SO many ways to go with whatever you've got in the fridge! if you try it in the mini tins, please let me know!

annie p - i based this recipe on a mini quiche dish from an old vegetarian cookbook.... i remember the first time i made them i was about 11... they are so freakishly easy to make!
