happy mouth!

nothing makes me feel better than fresh fruit salad! delicious! tastes like summertime.

i marinated a chicken breast in regular old OJ (rachel ray, i am not) overnight and then sauteed it on the stove under the citrus juices reduced. the reduced juice served as a lovely salad dressing once everything cooled off.

My salad contains:

  • orange marinated chicken
  • sugar peas, cooked and cooled
  • half a peach
  • some blueberries
  • some grapes
  • fresh spinach

salad alone is rarely enough to keep me satisfied, even with protein on top, so i also had my other half a peach with some non fat plain yogurt.... yummmmm!

I'm excited about this new blog because = More amazing meals for me! I have more luck then a lotto winner. Cheers for all the great food and making me healthy once again. Does this mean when i cook we are going to take pictures of it? Oh dear!

I love fruit in my salads with some protein! Great easy choice at home. I'm a live-in GF soon-to-be wife as well -- next March, so I can totally relate to amping up the workouts and reigning in the health.
