Good evening! I whipped up a yummy Black Bean Quiche before my friend Harry and I went to go visit Future Husband's little brother--he just got a new apartment.
Black Bean Quiche
This recipe is so easy and can be modified in many different ways. Plus, the slices freeze well and make a yummy, protein-packed breakfast (or lunch... or dinner...)! Even better, the recipe makes four servings and each is only 275 calories. I made a "Mexican themed" quiche:
Ingredients:
- 6 eggs
- 1/4 cup chopped pepper
- 1/4 cup chopped red onion
- 1/2 cup chopped spinach
- 1/4 cup ricotta cheese
- 1/4 cup shredded cheddar cheese
- 3/4 cup brown rice
- 1/2 cup black beans
- 1 tablespoon pepper
- 2 tablespoons salsa
Preparation:
- Heat oven to 350 and grease an 8-inch pie dish.
- Mix all ingredients together (except salsa).
- Bake for 40 minutes (or until center is firm).
- Let cool slightly and cut into four slices.
- Serve with a side of salsa.
- Enjoy!
I had another small slice -- it was SOO GOOD! :)
After dinner, Harry and I drove 30 minutes to see Future Husband's little brother new college apartment. On the way there, we stopped at the gas station and I got some fresh fruit -- grapes! So nice to see options like this at the gas station. I had about 4 ounces (??).
This apartment is like the dream college apartment. Check out this view! I enjoyed a Miller Lite... college style. It was a 16 oz., but I only drank half. ;)
Lunch and Afternoon Snacks
Going back in time... around 4 Pm, I had two Wasa crackers and PB butter.
For lunch, I made a platter lunch of mini sandwiches (turkey + cheddar on WW bread), a plum, edamame, and carrots. I love platter lunches, they take SO long to eat!
I needed a pick me up, and I had an iced coffee as a sweet treat after lunch.
For a mid-morning snack, I had the MOST DELICIOUS peach ever!! MMMM!
